Vegetable Penne


McCain French Stir Fry Mix

500 grams penne pasta 

3 tablespoons olive oil 

1 onion finely chopped 

2 cloves garlic finely chopped 

1 cup of baby tomatoes 

2 tablespoons balsamic vinegar 

1 teaspoon chilli flakes 

½ bunch chopped basil 

1 teaspoon chopped sage leaves 

Salt and pepper to taste 




Prep Time: 5 minutes
Total Time: 15 - 20 minutes

  1. Cook the pasta, drain and set aside 
  2. Heat olive oil in pan over medium heat and add the onions and garlic and allow to cook gently 
  3. Add the baby tomatoes, salt and balsamic vinegar to the pan and allow to cook for about 6 minutes until they blister and charred 
  4. Remove the onions and tomatoes from the pan 
  5. To the same pan add a splash of olive oil and the McCain French Stir Fry with the chilli flakes - mix and allow to cook over high heat 
  6. Once cooked, remove from the heat and the onions and baby tomatoes back to the pan 
  7. Toss the cooked vegetables with the pasta and add in the chopped basil and chopped sage 
  8. Adjust seasoning and serve with crusty bread
