Roast Balsamic Chicken Fillets


1 packet McCain Mediterranean Roast Vegetables

1 kg Chicken Fillets


Balsamic Marinade

1 tablespoon crushed garlic

2 tablespoon chopped thyme

1 tablespoon chopped rosemary

1 tablespoon chopped parsley

1/3 cup balsamic vinegar

1 tablespoon honey

1 tablespoon mustard

Salt and pepper

Prep Time: 5 minutes
Total Time: 25 minutes + 2 hour marination time

  1. Combine all the ingredients listed under chicken marinade and mix well – allow the chicken to marinade for at least 2 hours
  2. Preheat oven to 200°C
  3. Place the McCain Mediterranean Roast veg on a large oven tray, drizzle with olive oil and salt and mix well – place the chicken around the veg and roast for 20 minutes
  4. Serve hot with a garden salad
