Penne Veg Napoli


1 packet McCain Roast Veg Mediterranean 

3 tablespoons oil

2 can chopped onion and tomato mix

1 teaspoon tomato paste

4 cloves of garlic finely diced

2 teaspoons chilli flakes

1 teaspoon brown sugar

3 teaspoons Italian herbs

Black pepper



Penne pasta boiled until dente

Parmesan cheese




Prep Time: 5 minutes
Total Time: 30 minutes

  1. Preheat oven to 180 Degrees Celsius
  2. Cook the roast veg according to package instructions and set aside
  3. In a skillet on medium heat, add the oil and when hot add the garlic and fry for 30 seconds before adding the canned tomatoes and onion mix, mix well
  4. Add the chilli flakes, brown sugar, tomato paste and Italian herbs and mix well
  5. Simmer on low heat until thickened about 12 - 15 minutes
  6. Add in the roasted veg, toss in the pasta and very gently stir to combine
  7. Adjust seasoning
  8. Garnish with basil and parmesan
