Chunky Sweet Potato And Carrot Soup


400 grams McCain Sweet Potato

400 grams McCain Julienne Carrots

2 tablespoons Olive Oil

1 onion finely diced

2 stalks celery chopped

2 cloves garlic minced

2 teaspoons dried parsley

2 cups stock Vegetable stock

Salt and pepper

Chopped parsley

Prep Time: 5 minutes
Total Time: 35 - 40 minutes

  1. Heat oil in a large pot and add the onions, celery and carrots
  2. After 6 minutes add the garlic and parsley
  3. Add in McCain Sweet Potato and mix well before adding the stock
  4. Allow to cook until the veg has softened
  5. Adjust seasoning and blend into a smooth co
  6. Remove 1/3 of the veg mixture and blend the rest into a smooth consistency
  7. Garnish with fresh parsley and croutons and serve immediately
