Tuna & Sweet Corn Salad

Ingredients

3 cups brown rice, uncooked.

2 cups McCain sweet corn.

2 tins shredded tuna in salted water, drained.

2 Spring onions, chopped.

100g sundried tomatoes, roughly chopped.

140g Mixed baby leaf salad.

2 Avocados, peeled and diced.

Greek salad dressing.

Directions

  1. Boil rice in salted water until cooked, then drain and allow to cool.
  2. Boil McCain sweet corn in hot water for 4 minutes, then drain and set aside.
  3. Place your brown rice in a large bowl, stir in McCain Sweet Corn, tuna, spring onion, sundried tomatoes, baby leaves and avocado.
  4. Add the salad dressing and toss to coat the salad, season to taste with salt and black pepper.

Alternative : Serve with beef strips with barbeque sauce
