Roasted Peri Chicken With Stir Fry Veg


1 packet McCain Stir Fry African  

1 tablespoons olive oil  

1.5 kg Chicken pieces – skin on 

2 tablespoons garlic and ginger 

1 tablespoon Chicken spice 

Salt and pepper to taste 


Ingredients for Sauce 

¾ cup Mayonnaise 

1 heaped tablespoon Chicken Spice 

1 tablespoon Garlic sauce 

1 teaspoon Dried parsley

1 teaspoon paprika 

3 tablespoons hot / peri peri sauce of choice  

1 teaspoon lemon juice 

Salt and pepper to taste 

300ml cream

Prep Time: 10 minutes
Total Time: 60 minutes

  1. Preheat oven to 180 Degrees Celsius 
  2. Rub the chicken with the oil, chicken spice, garlic and ginger and salt and pepper 
  3. Place in the oven for about 40 minutes – turning once 
  4. Meanwhile gather all the ingredients listed under sauce (except the cream) and place in a sauce pan over medium heat , mix well and simmer until starting to bubble 
  5. Add in the cream after 2 minutes and allow to simmer and switch off 
  6. Fry the Stir fry veg in a skillet with some oil and fresh chopped garlic, until tender and crunchy, season and keep aside 
  7. After 40 minutes of the chicken being in the oven, remove the chicken from the oven and pour over the sauce and place back in the oven for 10 minutes 
  8. Serve with Chips and Stir Fry Veg
