Roast Veg Salad


McCain Roast Veg Balsamic Glaze - Classic

1 can chickpeas rinsed and drained


A handful of Pomegranate seeds

Salt and pepper to taste


For the Dressing

Juice of 1 small lemon

2 tablespoon Balsamic glaze

1 teaspoon olive oil

½ teaspoon cumin powder

½ teaspoon sugar

1 teaspoon Chilli flakes

Salt and pepper to taste

Prep Time: 5 minutes
Total Time: 25 minutes

  1. Cook the Roast veg according to package instructions
  2. Combine all the ingredients for the dressing and mix well to incorporate and mix with the chickpeas
  3. On a large plate/platter spread the cooked roast veg with the glaze, add the chickpeas, rocket and
  4. Top with the pomegranate seeds
  5. Season with salt and freshly ground black pepper
