Peanut Satay Chicken


1 packet McCain Roast Veg Classic

1 cup McCain Garden Peas

2 tablespoons Oil

2 teaspoons crushed garlic

800g Chicken Fillets cubed

Salt and pepper to taste


Peanut Satay Sauce

1/2 cup peanut butter

1/2 cup soy sauce

Sachet of sauce from McCain Roast Veg Classic

1 tablespoon cornstarch

1 tablespoon water

Prep Time: 5 minutes
Total Time: 40 minutes

  1. Combine all the ingredients listed under Peanut Satay Sauce and whisk well until smooth - keep aside
  2. Season chicken with salt and pepper
  3. Heat oil in large skillet and on medium-to-high heat
  4. Fry the chicken in batches until done
  5. Remove and keep aside
  6. Add the garlic to the skillet and fry for 30 seconds before adding the veg
  7. Allow to cook for 6 minutes before adding the peas
  8. Cook for a further 4 minutes and add the chicken back to the pot
  9. Add in the peanut sauce and mix well – cook for a further 3 minutes and switch off heat
  10. Serve with rice
