Mexican Chicken And Crispers


McCain Crispers 

1 Whole Chicken


Marinade for Chicken

4 tablespoons Olive oil

1 Orange Juiced – about 3 tablespoons

1 teaspoon Lemon Zest

3 teaspoons Fresh Garlic crushed

1 teaspoon Smoked paprika

1 teaspoon paprika

1 teaspoon Chilli flakes

1 tablespoon chopped fresh Oregano

1 teaspoon Cumin powder

Salt and pepper


Lemon Wedges or slices for Serving

Prep Time: 10 minutes
Total Time: 75 minutes

  1. Combine the all the ingredients listed under Marinade for Chicken and mix well olive,
  2. Rub the marinade all over the chicken
  3. Allow the chicken to stand for at least 2 hours, or overnight in the fridge
  4. Heat oven to 220 Degrees Celsius
  5. Roast the chicken for 15 minutes on 220 Degrees Celsius and then turn down the heat to 180 Degrees Celsius and cook for a further 40 minutes, turning once halfway
  6. Check if the water has run dry and the chicken is cooked
  7. Allow the chicken to rest for 10 minutes
  8. Enjoy with a large crisp salad and McCain Crispers
