Creamy Veg Soup


800 grams McCain Country Mix

2 tablespoons oil

1 large onion diced

2 teaspoons ginger and garlic paste

2 medium potatoes cubed

1 - 2 teaspoons dried herbs of fresh herbs of choice –  I used thyme

1 teaspoon chilli flakes

2 teaspoons curry powder

2 - 3 cups Vegetable stock

Salt and pepper




Prep Time: 5 minutes
Total Time: 50 minutes

  1. Heat oil in large pot on medium heat
  2. Add the onions and cook until softened, then add the garlic and ginger
  3. Next we add the spices and herbs and potatoes, season according to taste
  4. Allow to cook for 5 - 10 minutes before adding the frozen veg and stock
  5. Simmer until softened
  6. Adjust seasoning
  7. Use a handheld blender to blend to desired consistency
  8. Garnish and serve
