Briam - Greek Roasted Veggies


800 grams McCain Garden Mix 

Olive oil

4 cloves of garlic crushed

2 teaspoon dried thyme

1 teaspoon oregano

1 teaspoon dried rosemary

Basil leaves torn

½ cup chopped parsley

700 grams Passata

Salt and pepper to taste




Prep Time: 5 minutes
Total Time: 30 - 40 minutes

  1. Preheat oven to 200 Degrees Celsius
  2. Toss the veg with the crushed garlic, thyme, oregano, rosemary and salt and pepper and set aside
  3. Pour the ¾ bottle of the passata into a large baking tray and sprinkle torn basil leaves and season with salt and pepper
  4. Top with the seasoned veg and the rest of the passata
  5. Cover with foil and bake for 15 minutes
  6. Remove from the oven and remove the foil and bake for a further 15 minutes
  7. Remove from the oven and sprinkle chopped parsley and drizzle with more olive oil
