Sweet Potato and Corn Fritters


300g McCain Frozen Sweet Potato Chunks

1 Cup McCain Original Choice Cut Corn

1/2 Cup All-Purpose Flour

1/4 Cup Milk

1 Large Egg

2 Tablespoons Chopped Fresh Parsley

1 Teaspoon Baking Powder

Salt And Pepper to Taste

Vegetable Oil (For Frying)


Total Time: 20 minutes
Serving Size: 12 fritters

  1. Steam the McCain Frozen Sweet Potato Chunks according to the package instructions until tender.
  2. In a large bowl, mash the steamed sweet potato chunks with a fork.
  3. Add the frozen corn kernels, all-purpose flour, milk, egg, chopped parsley, baking powder, salt, and pepper to the sweet potato mash. Mix well to form a batter.
  4. Heat vegetable oil in a large Pan over medium heat.
  5. Drop spoonfuls of the sweet potato and corn batter into the Pan, pressing down lightly to form fritters.
  6. Cook the fritters for 2 - 3 minutes on each side until they are golden brown and crispy.
  7. Drain the fritters on paper towels and serve warm as a delicious side dish.
