McCain Cheese Shotz Summer “Nachos” With Rosa Tomato And Spring Onion Salad

Ingredients

500 g McCain Cheese Shotz, cooked as per instructions on pack

 

Tomato and Spring Onion salad

200 g Rosa tomatoes, quartered

3 spring onions, finely sliced

150 g McCain Cut Corn, defrosted  

Salt and freshly ground black pepper, to taste

 

Avo and Coriander Dip

2 Ripe avocados, roughly chopped

1 lemon, zested and juiced

15 g fresh coriander, roughly chopped (additional for garnish)

5 g fresh mint, roughly chopped

1 red chilli, seeded to taste (optional)

Salt and freshly ground black pepper, to taste

Serve with McCain Onion Rings

100 ml sour cream, on the side

Directions

Serving Size: 4

  1. For the salad: combine the tomatoes, spring onions, McCain Cut Corn; season to taste; Set aside.
  2. For the avo and coriander dip: using a potato masher or fork, mash the avo, lemon juice and zest, coriander, mint, and chilli if using, season to taste. Mixture should be chunky.
  3. Serve McCain Cheese Shotz on a platter, with tomato salad and avo dip on the side
  4. Garnish with fresh Coriander and sour cream on the side, with a portion of McCain Onion Rings.

Variations, Hints and Tips

  • Use McCain Mozzarella Sticks as an alternative.
  • Serve the summer “Nachos” in single portions for a cocktail party or starter
  • Make and freeze the avo dip, freeze in small quantities and defrost in cold-water for 30minutes.
