Sweet Corn and Chicken Quesadillas


1 Cup McCain Frozen Sweet Corn, Thawed

1 Cup Cooked and Shredded Chicken

1 Cup Shredded Cheddar Cheese

1/2 Cup Diced Bell Peppers (Any Colour)

1/4 Cup Chopped Fresh Coriander

4 Large Flour Tortillas 


Total Time: 30 - 40 minutes
Serving Size: 2 - 3

  1. In a bowl, mix the sweet corn, cooked chicken, shredded cheese, diced bell peppers, and chopped coriander.
  2. Place a tortilla on a flat surface and spread the sweet corn and chicken mixture on one half of the tortilla.
  3. Fold the tortilla in half to cover the filling and press gently. Heat a non-stick pan over medium heat and cook the quesadilla for 2 - 3 minutes on each side until it turns golden and the cheese melts.
  4. Repeat the process with the remaining tortillas and filling.
  5. Cut the quesadilla into wedges and serve with salsa
