Sweet Corn and Avocado Salad


2 Cups of McCain Frozen Sweet Corn, Thawed.

1 Ripe Avocado, Diced.

1 Cup Cherry Tomatoes, Halved.

1/4 Cup Chopped Red Onion.

2 Tablespoons Chopped Fresh Coriander.

2 Tablespoons Lime Juice

1 Tablespoon Olive Oil

Salt And Pepper To Taste


Total Time: 45 minutes
Serving Size: 2 - 3

  1. In a large bowl, combine the sweet corn, diced avocado, cherry tomatoes, chopped red onion, and fresh coriander.
  2. In a separate small bowl, whisk together the lime juice, olive oil, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss gently until all the ingredients are coated.
  4. Adjust the seasoning if needed and refrigerate for 30 minutes before serving.
