Roasted Butternut and Feta Salad with Honey-Lemon Dressing


200g McCain Frozen Butternut Chunks

100g Feta Cheese, Crumbled

50g Mixed Salad Greens (Lettuce, Arugula, Spinach, Etc.)

2 Tablespoons Pumpkin Seeds

2 Tablespoons Olive Oil

1 Tablespoon Lemon Juice

1 Tablespoon Honey

Salt And Pepper to Taste


Total Time: 25 minutes
Serving Size: 2

  1. Preheat the oven to 200°.
  2. Toss the McCain Frozen Butternut Chunks with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread the Butternut Chunks on a baking sheet and roast in the preheated oven for about 20 minutes or until tender and caramelized.
  4. In a small bowl, whisk together the remaining olive oil, lemon juice, honey, salt, and pepper to make the dressing.
  5. In a serving bowl, arrange the mixed salad greens, roasted Butternut Chunks, and crumbled feta cheese.
  6. Drizzle the honey-lemon dressing over the salad and toss gently to combine.
  7. Sprinkle pumpkin seeds on top before serving.
