Green Bean and Almond Pilaf


400g McCain Frozen Cut Green Beans

1 cup basmati rice

2 cups vegetable broth

1/2 cup slivered almonds

1 tablespoon butter

Salt and pepper to taste

  1. Steam the McCain Frozen Cut Green Beans according to the package instructions until tender.
  2. In a large pot, melt the butter over medium heat. Add the slivered almonds and toast them until golden.
  3. Stir in the basmati rice and cook for a minute, coating the rice with butter and almonds.
  4. Pour the vegetable broth into the pot and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 15 minutes or until the rice is cooked and the broth is absorbed.
  6. Add the steamed green beans to the pot, and season with salt and pepper to taste.
  7. Fluff the pilaf with a fork and serve as a flavorful side dish.
