Cauliflower Breakfast Wrap
1 Cup McCain Frozen Cauliflower Florets, Cooked According to Package Instructions and Chopped into Small Pieces
2 Large Eggs
2 Whole Wheat or Spinach Tortillas
1/4 Cup Shredded Cheddar Cheese
1/4 Cup Diced Tomatoes
1/4 Cup Diced Bell Peppers (Any Colour You Prefer)
2 Tablespoons Chopped Fresh Coriander or Parsley
Salt and Pepper to Taste
Hot Sauce or Salsa (Optional, For Added Flavour)

- Cook the McCain frozen cauliflower florets according to the package Method. Once cooked, chop the cauliflower into small pieces and set aside.
- In a small bowl, whisk the eggs until well beaten. Season with a pinch of salt and pepper.
- In a non-stick pan over medium heat, pour the beaten eggs and cook, stirring gently, until they are scrambled and fully cooked. Remove from the heat and set aside.
- Warm the tortillas either in a microwave or on a dry pan over medium heat for a few seconds on each side until pliable.
- To assemble the wrap, divide the scrambled eggs evenly between the two tortillas, placing them in the centre.
- Sprinkle the chopped cauliflower, diced tomatoes, diced bell peppers, shredded cheddar cheese, and chopped coriander (or parsley) over the eggs.
- Optionally, drizzle a small amount of hot sauce or salsa for added flavour.
- Fold in the sides of the tortillas and roll them up tightly to form the wrap.
