Caprese Salad On Skewers With Red Pepper Pesto

12 cherry Tomatoes halved
24 basil Leaves
250g Mozzarella (Cubed)
¼ cup red pepper pesto

- In a deep fryer, deep fry McCain Mozza Melters for 3 mins then set aside to cool.
- Using a skewer, insert cherry tomato, basil leaf, mozzarella cube, basil leaf, tomato and finish with mozza melter.
- Repeat the process until you have 12 Skewers.
- Drizzle with red pepper pesto then serve.
