Caprese Salad On Skewers With Red Pepper Pesto

Ingredients

12 McCain Mozza Melters

12 cherry Tomatoes halved

24 basil Leaves

250g Mozzarella (Cubed)

¼ cup red pepper pesto

Prep Time: 10 min
Total Time: 5 min
Serving Size: 4

  1. In a deep fryer, deep fry McCain Mozza Melters for 3 mins then set aside to cool.
  2. Using a skewer, insert cherry tomato, basil leaf, mozzarella cube, basil leaf, tomato and finish with mozza melter.
  3. Repeat the process until you have 12 Skewers.
  4. Drizzle with red pepper pesto then serve.
