Camembert Bites Puff Pastry Tartlets


For the tartlets: MAKES 1 tarlet
1 McCain P!CKERS Camembert Bite


Other Ingredients: 
80g puff pastry (room temperature)
Egg wash (1 egg, 5ml water and a pinch of salt, lightly beaten)
2L cooking oil (sunflower or canola)
4 rocket leaves, rinsed & dried


For the Onion Jam: enough for 6 portions 45ml per portion
45ml extra virgin olive oil
3 large brown onions, peeled and thickly sliced
2 bay leaves
1 sprig fresh rosemary
½ cup white sugar
¼ cup apple cider vinegar

For the Onion Jam:

  1. Heat the olive oil in a medium-sized saucepan over medium heat. Add the onion slices, season with salt, sprinkle the sugar over. Stir well, cook for 6 minutes until the onions start to caramelise. Add the rest of the ingredients, stir thoroughly, and cook for another 10 -14 minutes until it resembles a glossy jam. Remove from heat, allow to cool.

For the tartlets:

  1. Preheat oven to 190˚C. Roll out the puff pastry on a clean surface, before cutting out 1 disc from the pastry using a 10cm fluted cookie cutter. Line a baking sheet with baking paper, place the disc on the baking sheet; before lightly brushing with the egg wash. Bake in oven for 10 minutes (or until golden brown); remove, allow to cool.
  2. Heat the cooking oil to 175˚C in a large saucepan, deep-fry the P!CKERS Camembert Bite for 3 minutes until golden and crisp. Remove from oil with a slotted spoon, allow to drain on kitchen paper towel.
  3. Top the pastry disc with a few rocket leaves, followed by a generous spoonful of the onion jam. Finally, top each tartlet with a Camembert Bite, serve and enjoy!
