Turmeric & Ginger Fish Stew

Ingredients

250 grams McCain Garden Peas    

800 grams fish fillets

Oil

1 onion chopped

1 teaspoon black mustard seeds

1 teaspoon crushed ginger

1 tablespoon turmeric powder

2 teaspoon chili flakes

2 teaspoons garam masala

1 teaspoon cumin powder

1 teaspoon tomato paste

1 teaspoon soy sauce

1 cup fish stock

1 tin coconut milk

Fresh chili chopped

Lime wedges

Salt and pepper to taste

Directions

Prep Time: 5 minutes  

Total Time: 30 minutes

Serves: 4

 

  1. In a large pot, heat the oil and flash fry the fish fillets and remove
  2. To the same pot add the mustard seeds
  3. Now add the chopped onions and allow to caramelize
  4. Add the ginger and mix well
  5. Add the turmeric, chili flakes, garam masala, cumin powder and tomato paste with a dash of water and mix
  6. Now add the fish stock and soy sauce, followed by the coconut milk and allow to simmer for 5 minutes
  7. Add peas and simmer for a further 5 minutes
  8. Add the fried fish back to the pot and simmer for a minute and remove pot from the heat
  9. Garnish with fresh chopped chili and lime wedges
  10. Serve with rice
