Sweet Potato Fries & Garlic Pesto

Ingredients

McCain Rosemary and Garlic Sweet Potato Fries 

1/3 cup olive of extra virgin olive oil 

1 small garlic clove crushed 

3 cups basil leaves 

3 tablespoons pine nuts or peanuts 

Juice of 1 lemon 

1 cup grated parmesan 

Salt and black pepper

Prep Time: 10 minutes

Cooking Time: 20 - 25 minutes

Serves: 4 

 

  1. Cook the McCain Rosemary and Garlic Sweet Potato Fries according to package instructions 
  2. In a food processor add the basil, garlic, pine nuts/ peanuts, parmesan and lemon juice and blend to combine 
  3. Slowly start adding the olive oil into the processor until it starts to emulsify and thicken 
  4. Taste and adjust seasoning as needed 
  5. Lay the Sweet potato fries on a serving dish and drizzle with the delicious basil pesto sauce
