Sweet Potato Cottage Pie

Ingredients

Ingredients for the Vegetable and Lentil Sauce

250g McCain Mixed Vegetables  

2 tablespoons oil
2 cloves crushed garlic

2 small bay leaves

1 tablespoon paprika

1 teaspoon dried Italian herbs
1 can chopped tomatoes

1 vegetable stock cube

1 tablespoon Worcestershire sauce
1 can lentils drained
salt and pepper to taste

Ingredients for the Cheesy Sweet Potato Mash

750g McCain Sweet Potato

Salt and black pepper
1 teaspoon dried Italian herbs

1 cup grated mozzarella

 

Directions

Prep Time: 5 minutes

Cooking Time: 45 minutes

Serves: 4

Method for the Cheesy Sweet Potato Mash

  1. Cook the McCain Sweet Potato according to the packaging instructions. I used the microwave option
  2. Remove from the microwave, be careful not to burn yourself with the steam
  3. Add salt, pepper and mash the sweet potato – its ok if it is a little chunky
  4. Set aside

Method for the Vegetable and Lentil Sauce

  1. Preheat oven to 200 degrees Celsius
  2. Begin by adding oil to your ovenproof pot
  3. Add your chopped onions and cook for about 5 minutes on medium heat 
  4. Add crushed garlic and bay leaves
