Spicy Mexican Beef Skillet


300 grams McCain Sweet Corn
1 packet McCain Savoury Rice
500 grams beef mince
3 teaspoons garlic and ginger crushed
1 onion chopped
1 large red pepper diced
1 can red beans rinsed and drained
1 can diced tomatoes
1 cup Chicken stock
2-3 teaspoons chilli flakes
1 tablespoon cumin powder
Juice of 1 Lemon
Chopped dhania
Salt and pepper


Serves: 4
Prep Time: 5 minutes
Total Time: 40 minutes


  1. Cook McCain Savoury Rice according to package instructions and set aside
  2. In a large pan, heat the oil and onion and add the beef mince
  3. Cook until browned, add the garlic and ginger
  4. Add the peppers with the spices and tomatoes
  5. Allow to cook for 10 minutes before adding the red beans and sweet corn
  6. Mix the beef mince mixture with the rice
  7. Squeeze the lemon juice and garnish with dhania
