Spiced Fish & Roast Veg Salad

Ingredients

McCain Roast Veg Classic

5 hake fillets

5-6 cloves of garlic crushed

Juice of 1 lemon

1 teaspoon cajun spice

1 teaspoon paprika

1 tablespoon olive oil

Butter

Salt and pepper

Chopped parsley

Directions

Serves: 4

Prep Time: 5 minutes 

Total Time: 35 minutes

 

  1. Roast the McCain Roast Veg according to package instructions and set aside
  2. Combine the garlic, lemon juice, olive oil, cajun spice, paprika, salt and pepper into a bowl and mix well into the fish fillets
  3. Heat a large pan on medium to high heat and start frying the fish until cooked and nicely charred
  4. Slice the fish into 2 inch chunks
  5. Toss the roast Veg into a bowl and top with the chucks of fish, drizzle olive oil, season, garnish and serve
