Roasted Veg & Halloumi


800 grams McCain Country Crop   

Olive oil

4 cloves of garlic crushed

1 punnet cherry tomatoes

300 grams halloumi

2 teaspoon Chili flakes

2 teaspoons dried oregano

Salt and pepper to taste


Serves: 4

Prep Time: 5 minutes 

Total Time: 35 minutes


  1. Preheat oven to 200 Degrees Celsius
  2. Toss the veg with the crushed garlic, oregano, chili flakes and olive oil and season generously
  3. Place into a large baking dish and roast for 15 minutes
  4. Remove from the oven, toss in the cherry tomatoes and halloumi
  5. Cook for a further 10- 15 minutes until tomatoes soften and halloumi browns
  6. Enjoy with a fresh side salad or with wraps and hummus
