Potato & Sun Dried Tomato Salad

Ingredients

500g McCain Diced Potato

150g sun-dried tomato

150ml Mayonnaise

1 punnet Spring Onion

1 teaspoon salt

40g Vegetable Stock (powder)

1l water

250g Micro greens OR 250g of fresh parsley for garnish

 

Directions

Prep Time: 10 - 12 min

Cooking Time: 10 -15 min

Serves 6

 

  1. Allow 750ml of water to boil in a pot
  2. Mix the vegetable stock with 250ml of water and add to boiling water in the pot
  3. Add McCain Diced Potatoes and allow to boil for 10 minutes
  4. Strain water and allow to cool
  5. In a bowl, add spring onion, sundried tomatoes, mayonnaise, and salt
  6. Add the cool McCain cubed potatoes to the mixture and mix.
  7. Garnish with micro greens or fresh parsley
