
Potato & Sun Dried Tomato Salad

Ingredients
500g McCain Diced Potato
150g sun-dried tomato
150ml Mayonnaise
1 punnet Spring Onion
1 teaspoon salt
40g Vegetable Stock (powder)
1l water
250g Micro greens OR 250g of fresh parsley for garnish
Directions
Prep Time: 10 - 12 min
Cooking Time: 10 -15 min
Serves 6
- Allow 750ml of water to boil in a pot
- Mix the vegetable stock with 250ml of water and add to boiling water in the pot
- Add McCain Diced Potatoes and allow to boil for 10 minutes
- Strain water and allow to cool
- In a bowl, add spring onion, sundried tomatoes, mayonnaise, and salt
- Add the cool McCain cubed potatoes to the mixture and mix.
- Garnish with micro greens or fresh parsley
