Potato & Chives Salad

Ingredients

500g McCain Potato Cubed

250g Sour Cream

250g plain yoghurt

250g mayonnaise

20g Salt

40g Vegetable Stock

1L water

1 tablespoon Micro greens OR 1 tablespoon of fresh parsley for garnish

 

McCain Diced Potato

Directions

Prep Time: 5 - 10 min

Cooking Time: 15 - 20 min

Serves: 6

 

  1. Allow 1L of water to boil in a pot
  2. Add McCain Cubed Potatoes and allow to boil for 10 minutes
  3. Strain water and allow to cool
  4. In a bowl, add plain yoghurt, sour cream, mayonnaise, and vegetable stock
  5. Add the cool McCain Diced Potato to the mixture and mix.
  6. Garnish with micro greens or fresh parsley
