Portuguese Rump & Oven Chips

Ingredients

1 packet McCain Texan BBQ Oven Chips

For the Rumps

700g Beef rump medallions

3 teaspoons paprika

2 bay leaves

2 teaspoons parsley dried

1 onion diced

1 teaspoon chilli flakes

2 teaspoon garlic powder

2 teaspoons Worcestershire sauce 

Salt and pepper

1 large onion diced

3 cloves of garlic diced

2 teaspoons paprika

2 cups veg stock

1 cup cream

Directions

Serves: 4 -5

Prep Time: 5 minutes 

Total Time:40 minutes

 

  1. Cook the McCain Oven Chips according to package instructions
  2. Marinate the rump with all the ingredients listed and keep aside
  3. Fry the beef in batches and remove once done
  4. Add onions to the pan with the garlic and sauté until translucent
  5. Add the paprika followed by the stock
  6. Allow to reduce then add the beef back to the pot and top with the cream
  7. Cook for a further 2 minutes and then remove from the heat  
  8. Enjoy with friends and family :)
