Lemon & Herb Pan Chicken


McCain Country Crop

1,5 kg chicken thighs bone in skin on

3 teaspoons paprika

Olive oil

Juice of one large lemon  

3 teaspoons crushed garlic

3 Tablespoons Italian herbs

Salt and pepper to taste


Serves: 4 – 5 people

Prep Time: 5 minutes 

Total Time: 45 minutes


  1. Preheat oven to 200 Degrees Celsius
  2. Season the chicken with salt, pepper and paprika and set aside
  3. In a jug combine the oil, lemon juice, garlic, Italian herbs and salt and pepper
  4. Place the chicken in a large oven tray and bake for 20 minutes
  5. Meanwhile combine the McCain Country Crop with the marinade and keep aside
  6. Remove the chicken from the oven and to the pan add the marinated veg
  7. Bake for a further 25 minutes until the veggies and chicken is cooked through
