Harissa Veg & Couscous Salad



McCain Roast Harissa Glaze – Mediterranean

Couscous steamed and set aside

1 packet mixed lettuce leaves   

100 grams olives

1 punnet Cherry tomatoes

1 Red onion sliced

1/3 cup Almonds chopped


For the Dressing:

30 ml Olive oil

Juice of a small Lemon

1 teaspoon Sumac

1 teaspoon Cayenne pepper

Salt and pepper to taste


Serves: 4 – 5 people
Prep Time: 10 minutes
Total Time: 20- 25 minutes

  1. Cook the Roast veg according to package instructions and set aside
  2. Combine all the dressing ingredients and mix well
  3. In a large bowl, add the couscous, next add the mixed lettuce leaves, olives, cherry tomatoes and red onion.
  4. Drizzle some of the dressing onto the salad and add the almonds.
