Chunky Pumpkin Soup

Ingredients

McCain Pumpkin Chunks

2 tablespoons butter

1 onion diced

2 teaspoons crushed garlic

Curry leaf

1 teaspoon chilli powder (you can add more if you prefer it spicy)

1 teaspoon cumin

1 teaspoon coriander powder

1 teaspoon turmeric powder

½ teaspoon cinnamon powder

2 cups vegetable or chicken stock

Salt and pepper to taste

Directions

  1. Set the Philips All-in-One Cooker to the saute function
  2. Add the butter and once it starts melting, add the onions
  3. Allow to saute for 3-4 minutes before adding the garlic
  4. Next add the curry leaves and all the spices and mix well
  5. Add in the McCain Pumpkin Chunks, stir to combine
  6. Adjust seasoning
  7. Add the stock and toss gently
  8. Close the lid and set the Philips All-in-One Cooker to the soup function and let the cooker do the rest
  9. It should set out to cook for 20 minutes
  10. Ensure the pressure is released before you open the cooker
  11. Enjoy warm with crusty bread
