Cauliflower & Potato Soup

Ingredients

McCain Cauliflower Florets

McCain Diced Potatoes

Olive oil

1 large onion roughly chopped

4 cloves garlic peeled

1 teaspoon chilli flakes

2 teaspoon cumin powder

Few sprigs of thyme

Vegetable stock

 

Directions

Prep Time: 5 - 10 minutes

Cooking Time: 40 -45 minutes

Serves: 4

 

  1. Preheat oven to 200 degrees Celsius
  2. Toss the cauliflower, diced potatoes, garlic cloves and onions with olive oil, salt, pepper, chilli flakes and cumin powder
  3. Lay on a baking tray and sprinkle the thyme sprigs
  4. Roast for about 40 minutes
  5. Once the vegetables are done, transfer to a blender with the vegetable stock and blend for about a minute or so until desired consistency is achieved
  6. Adjust seasoning
