Cannellini Bean & Veg Soup

Ingredients

McCain Roast Veg_Classic

2 tablespoons Oil

1 large onion diced

2 stalks celery finely diced

3 cloves of garlic crushed

2 teaspoons paprika

1 teaspoon chilli flakes

1 can chopped tomatoes

1 teaspoon tomato paste

1 cup stock

2 teaspoons Italian herbs

2 cans cannellini beans – rinsed and drained

Italian parsley

Prep Time: 5 minutes
Total Time: 40 minutes

 

  1. Cook the McCain Roast veg according for 13 minutes and keep aside
  2. In a large pot, heat oil on medium heat and the onions, garlic, and celery until translucent
  3. Add the mixed herbs, paprika, chilli flakes, tomato paste and tomatoes
  4. Allow to cook on medium heat until thickened – add stock in between – about 15 minutes
  5. Gently add in the roast veg and cannellini beans
  6. Allow to simmer for about 10 minutes
  7. Remove from the heat, top with chopped parsley, and serve
  8. Enjoy with friends and family
