Butternut & Bacon Mac & Cheese

Ingredients

400 grams McCain Mashed Butternut

250 grams bacon bits

80 grams Butter

1/3 cup flour

3 cups milk

100 grams Parmesan cheese

250 grams Cheddar cheese

2 teaspoons Garlic and herb seasoning

300 grams Penne pasta

 

For the Breadcrumb Topping:

½ cup breadcrumbs

1 teaspoon garlic and herb seasoning   

2 tablespoons melted butter

Salt and pepper

Combine the above ingredients and mix well

 

Directions

Prep Time: 5 minutes

Total Time: 40 minutes

Serves: 5 - 6

  1. Preheat oven to 180 Degrees Celsius
  2. Cook the McCain Mashed butternut according to package instructions and set aside
  3. Cook your pasta and set aside 
  4. Heat a pan on medium heat and fry the bacon bits, remove the bacon and wipe off the pan of any excess fat and add the butter
  5. Once the butter has melted add in the flour and slowly start adding the milk, a little at a time to avoid lumps
  6. Whisky continuously until it is lump free and thickens up  
  7. Remove the sauce from the heat, add the cheeses, salt and pepper and mashed butternut
  8. Mix well to combine
  9. In an oven proof casserole, combine the boiled pasta, butternut cheese sauce and bacon and toss well
  10. Season with salt and black pepper
  11. Sprinkle with the breadcrumb topping and extra cheese
  12. Bake for 25-30 minutes until golden brown
