Beetroot Hummus


250g Diced Beetroot

400g tin chickpeas, drained and rinsed

1 garlic clove, peeled

1 tsp ground coriander

½ tsp sea salt

2 tbsp olive oil

2 tbsp fresh lemon juice

½ tsp ground black pepper



Prep Time:  5 -10 min

Cooking Time:  5 min

Serves: 4 -6


  1. Put the chickpeas, garlic, coriander, salt and olive oil in a food processor
  2. Pour lemon juice and seasoning, blitz until smooth,
  3. Fold the beetroot into the hummus and blitz again for20 seconds just to incorporate beetroot into the hummus
  4. Taste for seasoning, if need be add a bit more.​
