
Beetroot Hummus

Ingredients
250g Diced Beetroot
400g tin chickpeas, drained and rinsed
1 garlic clove, peeled
1 tsp ground coriander
½ tsp sea salt
2 tbsp olive oil
2 tbsp fresh lemon juice
½ tsp ground black pepper
Directions
Prep Time: 5 -10 min
Cooking Time: 5 min
Serves: 4 -6
- Put the chickpeas, garlic, coriander, salt and olive oil in a food processor
- Pour lemon juice and seasoning, blitz until smooth,
- Fold the beetroot into the hummus and blitz again for20 seconds just to incorporate beetroot into the hummus
- Taste for seasoning, if need be add a bit more.
