Beef Mince and Garden Vegetable Soup

Ingredients

500g McCain Garden Mix

1 tablespoon oil

500g beef mince

2 stalks celery chopped

1 large onion diced

3 teaspoons crushed garlic

1 tablespoon chopped thyme

2 tablespoons Italian herbs

2 tablespoons tomato paste

2 teaspoons Worcestershire sauce

3 potatoes peeled and cubed

2-3 cups beef stock

Salt and pepper to taste

Directions

  1. Turn the Philips All-in-one Cooker to the sauté function
  2. Add the oil and onions, followed by the celery
  3. Allow to sauté before adding the garlic and thyme and, mix well
  4. Add the beef mince and break up any lumps
  5. Add the Italian herbs, tomato paste and Worcestershire Sauce and mix to combine
  6. Add in the McCain Garden Mix and give it a toss
  7. Season to taste
  8. Add the stock
  9. Close the lid
  10. Switch the cooker to the soup function and it will cook for 20 minutes
