1 x 750g bag McCain Sweet Potato Straight Cut chips
16 baby truss tomatoes
1 tbsp olive oil
1 ripe avocado
100g feta cheese
Basil leaves to serve
Heat oven to 230°C
Place chips evenly as a single layer on a tray. Place tomatoes on a second tray and drizzle with olive oil. Place both trays into pre heated oven. Bake according to the chip pack instructions.
While baking, mash the avocado and feta together and set aside.
To serve, remove the golden sweet potato chips from oven and divide between 4 dinner plates. Top with mashed avocado and feta mix, and 4 baked tomatoes. Serve sprinkled with basil leaves.
