Warm and Hearty Beef Stew

Ingredients

250 grams McCain Roast Veg – Mediterranean

Dash of Olive oil

800 grams beef chuck stewing meat

Salt and pepper

1 onion diced

1 stalk celery diced (optional)

3 cloves garlic crushed

2 tablespoons Worcestershire sauce

4 cups beef stock

Fresh Thyme

Chopped parsley

Directions

Prep Time: 10 minutes
Total Time: 60 - 90 minutes

  1. Season the beef with salt and pepper
  2. Heat oil in a large pot on medium heat
  3. Start frying the beef in batches until browned, remove and keep aside
  4. To the same pot, add the onions and celery and fry for 5 minutes before adding the garlic
  5. Add the thyme and bring the beef back to the pot
  6. Mix well and add the Worcestershire sauce and stock
  7. Allow to cook for about an hour, until the meat is beginning to soften – add more water if needed
  8. Once the meat has softened, add the McCain frozen veg 
  9. Allow to cook for 8 minutes and then remove from the heat
  10. Garnish and serve
