Warm and Hearty Beef Stew
Ingredients
250 grams McCain Roast Veg – Mediterranean
Dash of Olive oil
800 grams beef chuck stewing meat
Salt and pepper
1 onion diced
1 stalk celery diced (optional)
3 cloves garlic crushed
2 tablespoons Worcestershire sauce
4 cups beef stock
Fresh Thyme
Chopped parsley

Directions
Prep Time: 10 minutes
Total Time: 60 - 90 minutes
- Season the beef with salt and pepper
- Heat oil in a large pot on medium heat
- Start frying the beef in batches until browned, remove and keep aside
- To the same pot, add the onions and celery and fry for 5 minutes before adding the garlic
- Add the thyme and bring the beef back to the pot
- Mix well and add the Worcestershire sauce and stock
- Allow to cook for about an hour, until the meat is beginning to soften – add more water if needed
- Once the meat has softened, add the McCain frozen veg
- Allow to cook for 8 minutes and then remove from the heat
- Garnish and serve
